Chocolate Steaks

Ingredients

  • 1 Tbsp Sea Salt
  • 1/2 Tbsp Black Pepper
  • 1 Tbsp Ancho Chili Powder
  • 1 Tbsp Cocoa Powder
  • 1 Tbsp Dark Brown Sugar
Cooking Instructions
Mix all ingredients together. Rub on steaks.

Notes
Excellent rub for steaks. Helps create a good sear and adds some interesting flavor.

Helms Family Beef BBQ

Ingredients

  • 3 lbs stew meat
  • 1 yellow onion
  • 12 oz soda (cherry coke or dr pepper adds some flavor)
  • 1/3 cup Worcestershire sauce
  • 1 1/2 tablespoons of apple cider vinegar or white vinegar
  • 1 1/2 teaspoons of beef bouillon granules (cube works as well)
  • 3/4 teaspoon dry mustard
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon red pepper (cayenne)
  • 3 garlic cloves
Cooking Instructions
1. Place meat into crockpot.
2. Chop onion, add it to pot.
3. In a bowl, combine the soda, Worcestershire sauce, vinegar, beef bullion, dry mustard, chili powder, red pepper, and garlic.
4. Mix well and make sure bullion cube is mostly dissolved.
5. Reserve 1 cup and refrigerate.
6. Pour the rest of the mixture over meat.
7. Cook the meat on low for 8-9 hours.
8. Remove the meat and onion from the crockpot.
9. Shred the meat with 2 forks.
10. Combine 1 cup of catsup and 1 tablespoon of butter in a saucepan. Cook over medium, stirring constantly until heated.
11. Pour the catsup and reserved mixture over meat and stir.

Serve on your choice of roll with cole slaw.

Grilled Broccolini

Ingredients

  • 1 bunch broccolini - ends chopped off
  • 1 lemon
  • Olive Oil
  • Salt
  • Pepper
Cooking Instructions
Broccolini is a great vegetable that is just starting to become available in Birmingham. It is kind of a combination of asparagus and broccoli, and I think it has the best characteristics of both.

Most times I've had it boiled or steamed, but I prefer grilling this green.

Zest the lemon and combine with broccolini, juice from lemon, olive oil, salt, and pepper. Let sit for 10 or 15 minutes before grilling over high heat.

Notes
A great way to prepare broccolini. If you don't know what it is, I'm not going to tell you.

Spicy Tangy Grill Glaze

Ingredients

  • 1/4 Cup Soy Sauce
  • Juice from 1 Lime
  • 3 Tbsp Brown Sugar
  • 2 Chipotle Peppers in Adobo Sauce
Cooking Instructions
You can find the smoked jalapeños, or chipotles in the Asian food section of most groceries. I like to keep these on hand as they add a bold smoky flavor and some real heat.

Mince the peppers and combine all ingredients in a small bowl. Wisk together until brown sugar is dissolved.

Brush on beef, chicken, or pork while grilling.

Notes
What a glaze! Sweet, hot, smokey, tangy.

Grilled Jalapeño Poppers

Ingredients

  • 10 Large Jalapeños
  • 5 Slices of Bacon
  • 3 oz Cream Cheese
  • 2 Tbsp Fresh Basil, minced
  • 1 Clove Garlic, minced
  • 2 Tbsp Sun Dried Tomatoes, minced
Cooking Instructions
Cut off the tops of the jalapeños. Cut a slit down one side lengthwise and remove seeds and pith.

Blanch peppers in boiling water for one minute. Let cool.

In a small bowl fold together cream cheese, garlic, basil, and sun dried tomatoes. Add a pinch of salt and fresh ground pepper.

Cut each piece of bacon in half.

Stuff the jalapeños with cream cheese mixture. Wrap each jalapeño with ½ strip of bacon. Secure with toothpicks or bamboo skewers.

Grill over low heat until bacon is crispy and peppers are fully roasted.

Notes
Always a crowd pleaser. You might want to make sure the folks eating this like spicy food.
