Ingredients
- 1/3 lb Polish Sausage
- 1 Sweet Onion
- 1 Clove Garlic
- 1 Jalepeno
- 1 tbsp Butter
- 2 16 oz Cans Black Beans
- 1 8 oz Can Diced Tomatos
- 1/4 Cup Chicken Broth
- 1 Beer
Dice the polish sausage and brown over medium high heat in a large pot. Add the butter and turn down the heat to medium. Add onion, jalapeño, and garlic, all diced. Sauté until the onions soften. Add a pinch of salt and fresh ground pepper.
Stir in the beans and diced tomatoes. Add half the beer and the chicken stock. Simmer for 25 minutes.
Optionally blend with a hand blender.
Serve with sour cream and/or grated cheddar cheese.
